Sheet Pan Sausage & Fall Veggies

Serves: 4

  • 1 lb (450 g) sausage, sliced into ½-inch rounds

  • 1 large sweet potato, peeled and diced (½-inch cubes)

  • 1 small red onion, sliced

  • 1 red or yellow bell pepper, chopped

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp rosemary

  • Salt & pepper, to taste

  • Optional: drizzle of maple syrup or a sprinkle of Parmesan before serving

Directions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.

  2. In a large bowl (or right on the pan), combine sausage, sweet potato, apple, onion, and pepper.
    Drizzle with olive oil and toss with paprika, garlic powder, thyme, salt, and pepper.

  3. Spread everything in a single layer. Roast for 25–30 minutes, stirring halfway, until the veggies are tender and slightly caramelized.

  4. Add a quick drizzle of maple syrup or sprinkle of Parmesan before serving if you like.
