Roasted Pumpkin Seeds
One of our favorite October traditions is carving pumpkins and roasting the seeds! It's a simple and fun way to make the most of your pumpkin!
Here’s what you’ll need:
-Seeds of 1 carving pumpkin, approximately 1 cup
-1 tablespoon of olive oil
-1/2 teaspoon of kosher salt
Directions:
Scoop the pumpkin guts out of your carving pumpkin.
Rinse the pumpkin guts with warm water in a colander to remove slime.
Dry the cleaned pumpkin seeds.
Preheat the oven to 350 degrees F.
Spread pumpkin seeds on parchment paper lined baking sheet.
Drizzle olive oil and sprinkle salt on pumpkin seeds.
Stir seeds around and spread evenly on baking sheet.
Bake for 12-15 minutes, stirring every 4 minutes.
Remove from oven and let seeds cool before storing in airtight container on your countertop.
